Champignon is the most popular cultivated mushroom in the world.
It accounts for 37.2% of total production. This mushroom is also the most popular in Russia — its share here is about 95%.

In the future, champignons will remain the most popular cultivated mushrooms among consumers. Exotic mushrooms (shiitake, еринgi, shimeji, etc.), which have recently become more common in retail chains, will remain niche products.

Most of the ongoing projects for the cultivation of champignons are in the Central and Volga Federal Districts. The share of completed projects is about 25% of the declared ones. The rest will either be launched later than the stated deadlines, or they will not start working at all. The main problems are the lack of funding and project implementation experience, and a competent team.

The market capacity of the Yaroslavl region can be estimated based on the average consumption rate of mushrooms in the Russian Federation – 1 kg/person per year. The consumption capacity for the Yaroslavl region is 1,266 tons/year. The market potential is more than 80%.

Now enterprises with an average production volume of 5 thousand tons per year are entering the market.

Investments to create a complex for growing champignons of such capacity are estimated at about 2.2 billion rubles. (with its own compost production), including:

  • 500 million rubles - for technological equipment
  • 700 million rubles - for other equipment and construction and installation work
  • RUB 1 billion - organization of compost production for mushroom cultivation
