Industrial production of cultivated shampagne
Champion is the most popular cultivated mushroom in the world.
It accounts for 37.2% of total production. The mushroom is also the most popular in Russia, with a share of about 95 per cent.
In the long run, champing will remain the most popular consumers of cultivated mushrooms. Exotic mushrooms (shiitaca, Jerzy, Chemégi et al.) that have recently become more frequent in retail networks and remain niche products.
Most ongoing champing projects - Central and Privatian Federal Districts♪ The percentage of projects implemented is about 25 per cent of the reported. The others or will be launched at a later date or will not begin work at all. The main challenges are the lack of funding and experience in the implementation of projects, the literacy team.
The size of the Yaroslava market can be assessed on the basis of the average consumption rate of mushrooms in the RF, 1 kg/person per year. Consumption intensity for the Yaroslav region - 1,266 tonnes/year. Market potential is over 80%.
Medium-sized enterprises now enter the market 5,000 tons per year.
Investments for the development of a champagne production facility are estimated at about 2.2 billion roubles. (with its own compost) in other words:

- 700 million roubles for other equipment and construction and installation
- 1 billion roubles - Compost production for mushroom production
